Chicken & Chorizo

Heat the oil in a saucepan and cook the onion, celery and red pepper gently until soft. Add rice, chicken stock and tomato puree. Simmer uncovered for about 10 minutes.

Stir in the chicken and chorizo, followed by peas and simmer for a further 5 minutes.

Switch off the heat, cover and leave to stand for 5 minutes before serving

Ingredients:

  • 225g cooked Manor Farm chicken, cut into cubes
  • 115g chorizo, sliced or diced
  • 3 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 1 celery stick, chopped
  • 400g long grain rice
  • 1 ¾ pints chicken stock
  • 1 tbsp tomato puree
  • 3 – 4 drops Tabasco sauce
  • 75g frozen peas
