Manor Farm Healthy Chicken Burgers

Method

  • Mix the Chicken Mince, lemon zest, shallots, ginger, garlic, salt and coriander together in a large bowl until combined.
  • Divide into 4 Burgers Tip: get a bowl of water and wet your hands to stop meat sticking to your hands.
  • Place burgers in hot oiled pan. Cook for 10-12 minutes until cooked through.
  • Place slices of cheese on the burgers Tip: place a metal bowl over the pan to create steam in the pan and to melt the cheese (approx. 1 min).
  • Cook the bacon on the pan and when cooked place on the cheese topped burgers
  • To make the pickled onion combine ingredients in a bowl.
  • Combine all the burger sauce ingredients and mix through the shredded lettuce.
  • Assemble lettuce with burger sauce onto the bottom bun then add the topped chicken burger, then add the pickled onion and finish by setting the bun top in place.

Ingrediants

Healthy Chicken Burgers

400g Manor Farm chicken mince

Zest of 1 lemon – keep juice for burger sauce

2 shallots finely diced

Grated ginger (thumb size)

2 cloves garlic finely diced

Sea salt to taste

Coriander finely chopped (alternatively use parsley or thyme)

4 slices of white cheddar (or cheese of your choice)

6 slices of streaky bacon

Iceberg lettuce shredded

Wholegrain buns

Oil for frying

 

Pickled Onion:

1 red onion finely sliced

Sea salt to taste

4-5 tblsp white wine vinegar

 

Burger Sauce:

3 tblsp mayonnaise

1 tblsp Worcester sauce

1 tsp tabasco sauce

1 lemon juiced
