Spicy Coriander and Yoghurt Chicken

1. Put all above ingredients in a medium bowl mix well and marinate flattened chicken fillets for 2 hours (remove 20 minutes before cooking).

2. Mix mayonnaise and chutney together and serve on the side.

3. Heat a pan on medium/high. Cook chicken for 3 - 4 minutes on each side.

Ingredients:

  • 4 Manor Farm chicken fillets 
  • 200mls plain yoghurt
  • Juice of half a lemon
  • 2 level teaspoons garam masala 
  • 1/2 level teaspoon chilli powder
  • 2 cloves garlic crushed
  • Small bunch coriander leaves finely chopped
  • 3 tbls mayonnaise
  • 3 tbls mango chutney

To flatten chicken fillets, place each fillet between 2 sheets of cling film and flatten evenly with a mallet or rolling pin to desired thickness.
