Ingredients:
500g Manor Farm chicken thighs, deboned and cut into inch cubes.
1 large onion.
2-inch thumb of ginger.
3 cloves of garlic.
2 or 3 red chillies (Depending on how brave you are) with seeds.
400g passata.
4 tablespoons of Madras curry powder.
1 tablespoon of ground coriander.
2 teaspoon of turmeric.
1 teaspoon of cumin.
1 teaspoon pepper.
A pinch of sugar.
Salt to taste.
Butter.
Dried coriander leaves to garnish.

Method:
1. To make the sauce: Put the onion and ginger (sliced and peeled), garlic, chilli, passata, spices, and sugar into a food processor. Blend it into a smooth paste, and add a 550ml of water.
2. Now put the sauce into a pan and simmer for an hour, with the lid off.
3. In a frying pan, cook the chicken in the butter so it's seared on the outside. Pour in your sauce and simmer it for about 20 minutes.
4. Garnish with a little coriander and serve on a bed of rice with some naan bread.
