Chicken Satay Kebabs

Thread the chicken pieces onto eight skewers and place in a shallow cooking tray.

Mix the marinade ingredients together. Pour the mixture over the kebabs and leave for 30 mins.

Mix the sauce ingredients together and simmer for 5-10 minutes. Grill the kebabs for 5-6 minutes on each side.

Serve the sauce with the kebabs, some rice or noodles and a side salad.

Ingredients:

  • 4-6 Manor Farm chicken breast fillets, cut into cubes

For the Marinade

  • 1 tbsp. soy sauce
  • Half tbsp. rice vinegar
  • 1 tbsp. oil
  • Half tbsp. red curry paste

For the Sauce

  • 1 can coconut milk
  • 1 tbsp. red curry paste
  • 2 cloves garlic, crushed
  • 1 tbsp. Soy sauce
  • 1 tsp brown sugar
  • 1 tbsp peanut butter
  • 1 tbsp fresh coriander, chopped
