B.L.T. with chicken and avocado

1. Preheat the grill to a medium heat. Brush the chicken with oil and season with salt and pepper.

2. Cook the chicken for 2-3 minutes on each side or until cooked through.

3. Cook the bacon for 2 minutes on each side or until crisp

4. Spread the mayonnaise on the bread and then layer the lettuce, tomato, chicken, and bacon on top.

  • 4 Manor Farm chicken breasts
  • 3 tablespoons olive oil
  • 8 streaky bacon rashers
  • 4 sourdough bread rolls
  • 125 ml whole-egg mayonnaise
  • 12 baby lettuce leaves
  • 2 large ripe tomatoes, thinly sliced
