1. Put some oil in a large pan and gently fry the shallots until they are transparent.
2. Add the chicken and stir-fry for 6 – 8 minutes until the chicken is cooked and browned all over.
3. Remove from the heat and add the mustard and crème Fraiche. Re-heat slowly for about 3 minutes or until piping hot.
Serve with boiled rice and some stir fried vegetables.
