Total Recipe Time: 21-30 minutes
450g Manor Farm chicken mini fillets.
4 slices mozzarella.
200g baby spinach, rinsed and patted dry.
2 tomatoes, sliced.
Handful of fresh basil leaves.
Preparation / Cooking Steps:
1. Combine chicken and half the pesto in a bag and set to one side for 15 mins.
2. Stir remaining pesto inti the mayonnaise and spread the mixture over the paninis.
3. Grill chicken for 5 mins on each side - remove from grill and let sit for 5 mins.
4. Place chesse on both sides of the paninis and layer the spinach,tomatoes & basil over the cheese. Place the grilled chicken over the ingredients on the bottom pannini half and secure with the top panini half.
5. Grill sandwich for 3 mins each side. Serve & Enjoy.
