240ml Italian Dressing, divided
400g Manor Farm chicken breasts...
1 small eggplant, cut into 1/2-inch-thick slices
1 medium zucchini, cut diagonally into 1/4-inch-thick slices
Green leaf lettuce
4 roasted red peppers packed in oil, drained
1 loaf peasant bread, sliced and grilled
Preparation / Cooking Steps:
1: Pour 3/4 of the Italian Dressing over the chicken, eggplant and zucchini in a large, shallow baking dish or plastic bag. Cover, or close bag, and marinate in refrigerator, for up to 3 hours, turning occasionally.
2. Remove chicken and vegetables from marinade, discarding marinade. Grill or broil chicken and vegetables, turning once and brushing occasionally with remaining Dressing, until chicken is thoroughly cooked and vegetables are tender.
3. To serve, layer lettuce, hot vegetables, hot chicken and roasted peppers on bread.
